1. A word processor is a better suited progam for this purpose because the notes that you are writing are words while a spreadsheet would be better suited for keeping neumarical lists. 
2. One reason the ability to visualize data is valuable is due to the fact that information can be more understandable when it is visualized. Presentations without charts, graphs and other visualizations can be very difficult to understand where a pie chart can be easily read and understood.
