Lytechinus variegatus is a sea urchin famous for its gonads, which are eaten raw in sushi dishes. Because they are so popular, the species is being heavily overfished. Thus, it is important to develop a method for commercially raising and caring for these urchins. Research is being conducted all over the country to gain a better understanding of how these organism develop, what nutrients are required in their diet, and what care is necessary to produce healthy urchins.
